Chicken Tortilla Soup

Ingredients
1.5 pounds of boneless, skinless chicken breast (cut into small chunks)2 cups of canned tomatoes (w/juice)4 TBSP cilantro1 Med Onion2 cloves of garlic1 tsp sugar8 cups of chicken broth2 cups of corn (frozen, canned, or fresh)1 cup of black beans (drained)2 to 3 chipotle peppers w/ 1 - 2 tsp adobo sauce*Optional (and not in nutritional info)tortilla chipsshredded cheesesour creamavocado
Directions
Makes 13 1-cup servings

In a blender combine tomatoes, cilantro, onion, garlic, and sugar. Blend until combined and smooth. Pour into a large pot with chicken, corn, black beans, and chipotle peppers. Add 1 to 2 tsps of adobo sauce (the more you add, the spicier the dish will be).

Bring to boil, cover and simmer for 20 minutes.

Serve with tortilla chips (baked to lower calories), low-fat cheese, sour cream, and chopped avocados.
