Chicken Tostadas

4 boneless skinless chicken breasts2 cups water1 cup onion, chopped1 jalapeno pepper, choppedcilantro, about 4 tbsps chopped1/4 cup no salt added tomato sauce1 tsp each garlic and pepper2 cups shredded lettuce3 cups refried black beans12 tostada shells ( i use mission)
Thoroughly cook chicken in skillet. When it's done cut it into small pieces and put into a medium pot. Add onions, jalapenos, water, cilantro, tomato sauce and spices. Cook until the chicken is basically shredded and most of the liquid has evaporated. About 20 minutes. Spread about a 1/4 cup of beans on a shell, then about 1/4 cup of the chicken on top of that. Top with the lettuce. You can add sour cream, guacamole and salsa of course but that brings up all the nutritional values. 2 Tostadas per serving. Makes 6 servings.
