Whole wheat, oat bran, flax pineapple muffins

Ingredients
1/2 cup flax seed meal1/2 cup whole wheat flour1/2 cup oat bran1/4 cup brown sugar1 teas baking soda1/2 teas baking powder1/4 teas salt1 Tbls cinnamon3/4 cup shredded carrots2 apples, shredded 1 egg1/2 teas vanilla1/2 cup pineapple with the juice(about 1/2 cup)
Directions
Shred carrot and apples. Add pineapple and set aside.
In a seperate bowl, add dry ingredients, including levening agents, powdered milk and salt, and mix. Add liquid milk, egg, vanilla and mix. Fold in shredded items.
Spray muffin tins with Pam, distribute batter evenly between cups. Bake 25 min at 350 degrees.
Makes 12 muffins.
