Coffe Cake Muffins

Ingredients
Batter:1 c. yogurt or sour cream, or half of each1 t. baking soda1/4 c. butter, softened1/4 c. honey2 eggs1 t. vanilla2 c. whole wheat pastry flour2 T. lecithin granules2 T. wheat germ2 T. oat bran2 t. baking powderTopping:1/2 c. unsweetened coconut1/2 c. chopped nuts1 t. cinnamon1 t. orange peel
Directions
Preheat oven to 350 degrees F.
Cream together butter, honey, eggs and vanilla. Stir in sour cream, baking soda, flour, lecithin, wheat germ, oat bran and baking powder.
Line muffin pan with paper muffin liners.
Combine topping ingredients and divide in half.
Put 2 T. of batter into muffin cups. Put half of topping mixture on top. Cover with remaining batter and top with the rest of the topping mixture. Bake for 20-25 min.
