No-Sugar and No-Oil Blueberry Oat Muffins

1 1/4 cups all-purpose flour1-cup quick cooking oats12 packets Truvia1 tsp. baking powder½-tsp. baking soda1/4 tsp. salt1 Tbsp Lecithin1 tsp cinnamon2 egg whites3/4-cup water1-cup fresh blueberries
1. Preheat oven to 400 f.
2. In a bowl, combine the first 6 ingredients. In another bowl, beat egg whites, and water. Stir into dry ingredients just until moistened. Fold in blueberries.
3. Fill paper-lined muffin cups, 3/4 full.
4. Bake in preheated oven for 18-22 minutes or until a toothpick inserted in the middle of muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
You can substitute any fruit that is fresh. If it is frozen, strain the extra juice and use instead of water.
