Chipotle Tuna Melts

Ingredients
8 slices of texas toast8 slices of cheddar or colby jack cheese10 oz tuna, packed in water4 tbsp chipotle mayo 2 stalks of celery, chopped1/4 onion, choppedchopped chipotle peppers to tastesalt and pepper to taste
Directions
Mix tuna, chipotle mayo, chopped celery, chopped onion, chopped chipotle peppers salt and pepper in a bowl.

Toast each slice of texas toast.

Spread tuna mixture onto slices of toast and place on baking sheet.

Top each tuna topped piece of toast with a slice of cheese.

Place baking sheet in oven set to broil until cheese is melted.
