Kelewele (Spicy Fried Plantains)

Ingredients

1 cup slice ripe plantains (they look yellow)1/2 teaspoon of cayenne or red pepper1/2 teaspoon of grated ginger root1/2 teaspoon of salt3 tablespoons of wateroil for frying (you can use vegetable oil but i like coconut oil because it gives it a better taste)
1. Mix together cayenne pepper, grated ginger root and salt, then mix with water.
2. Toss together the sliced plantain and spices in a bowl.
3. In a deep pan, heat oil until it really hot. You need enough oil for plantain to float. Fry plantains, turning once, until golden brown on both sides.
4. Drain on absorbent paper, keep warmed until all the plantains are fried.
5. Serve immediately.
For a sweeter variation try with ground cloves, nutmeg and cinnamon.
