Quik & Easy Macaroni and Cheese

Ingredients
1 cup Ronzoni Smart Taste Elbow macaroni1/4 cup egg beaters4 ounces Velveeta 2% milk cheese1Tablespoon Smart Balance Omega Light buttery spread1 Tablespoon grated parmesan cheese
Directions
Cook pasta according to directions on box to the firm stage. While pasta is cooking cut up the cheese in small cubes and measure the other ingredients. When pasta is done drain well and put back in pot. Add cheese, and buttery spread to the pot and mix until the cheese is melted. Add the egg beaters and mix. Pour into a non-stick baking dish and sprinkle top with 1 Tablespoon grated parmesan cheese. Cover with foil. Bake for 15 minutes.

Makes 4 generous 1/2 cup servings.

    I did not have any eggbeaters, so I used an egg and some milk. I did not have any velveeta, so I used sharp cheddar cheese and Monterey and Colby cubes instead. Simple recipe, and very good. - 10/2/15
