Cream of Celery soup

3 cups sliced celery1 cup diced onion2 Tbsp butter1 tsp fresh thyme2 cups of fat free half and half1 cup vegetable broth1 med. potato, peeled and cubed10 cups water1/4 Cup floursalt and pepper to taste
Heat pan and add butter, celery and onion, Saute until onion becomes transparent and begins to brown. Add broth, half and half, potatoes thyme and all but 1 cup of the water. Cook until potatoes are tender. combine 1 cup of water with 1/4 cup of flour until well mixed. Add to soup to thicken. Salt and pepper to taste throughout. All ingredients are approximate as I add as it looks and tastes right. Is very yummy. Enjoy.
