Okra and Tomatoes

Ingredients
2 cups of fresh okra, diced1/2 cup finely diced onion2 large stalks of celery, diced14.5 oz can of diced or peeled tomatoes in juice1/2 tsp garlic powder (or more to taste)salt and pepper to tasteOnion Onion (Tastefully Simple Seasoning or other onion flake seasoning) to taste ~ 2 tsp olive oil
Directions
Dice vegetables and set aside.

Heat olive oil in a pan over medium high heat, add vegetables and saute over medium heat for about 10 minutes, stirring frequently. Add the tomatoes and seasonings when vegetables are beginning to soften and simmer over low to medium heat for about 20 more minutes.

Makes about 3 1 cup servings.
