Roast Beef Waldorf Club Sandwiches

Ingredients
4 very thin slices red onion1/2 Golden Delicious apple, peeled and finely chopped (1/2 cup)2 stalks celery, finely chopped4 tbsp light mayo2 tbsp sour cream1/2 tsp fresh lemon juice1 tbsp horseradish12 slices pumpernickel bread, lightly toasted8 oz thinly sliced rare roast beef
Directions
1. In small bowl, combine onion with enough ice water to cover; let stand 15 minutes. Drain.
2. In separate small bowl, combine apple, celery, 2 tbsp mayo, 1 tbsp sour cream, and lemon juice until well blended. In cup, combine remaining 2 tbsp mayo, 1 tbsp sour cream and horseradish until well blended.
3. Spread horseradish mixture evenly on 4 bread slices. Layer roast beef and onion on top. Spread celery mixture evenly on 4 bread slices and place, celery mixture side up, over roast beef. Top with remaining bread slices. To serve, cut sandwiches in half.
