Tacos with potato and carrot

Ingredients
Flour Tortillas, 8 tortilla, medium (approx 6" dia) 1/2 cup cojack cheese *Potato, raw, 1 medium dices with skin on1/2 small onion mincedCarrots, raw, 1 large diced*avacado, medium, diced with a sprinkle of lime juiceSour Cream, reduced fat, 4 tbsp Ground beef, extra lean 1lb1/2 Tomato chopped Beans, pinto, 1 cup (in can/drained and mashed)Garlic powder, 1 tbsp *lawrys seasoning salt 1Tsp
Directions
Cook ground beef, onion, carrot and potato. (DRAIN)Season with garlic powder and Lawrys season salt. Mash Beans and spread a little on a warmed tortilla. Top with taco mixture, cheese, tomato, sour cream, and avacado
