Ingredients
my recipe makes up to 16 servingsIn a Large Mixing BowlAdd two packages of imitation crab meat chopped1/4 c or 8 tbs cilantro chopped1 lg cucumber w/peel chopped1 lg Jalapeno finely chopped...wear gloves for protection5 lg tomatoes chopped1 lemon-cut one end off and squeeze as much juice as you can ...(watch for seeds to fall out)Mix well!!!You can serve this by itself or add it to corn tortillas (Tostada style) and garnish with a pinch of cheddar cheese. This does increase the fat...Mexican style will add on another 10 grams of fat per crab tostadaby itself as a salad...its has only 5 grams of fat per 1 cup
Directions
there is absolutely no cooking involved. This is a perfect summer salad, main course, or side dish...you choose!!!

Thank you ...everyone who has tried it without me telling them the ingredients are amazed at how "unfishy" it is and its just so light. Let me know how you like it.

Made it this evening. Came out really well. The ingredient details include an avocado, but I am not sure whether or not that is included in the total nutrition information. Also, what is a serving size? We added .5 cup of Hellmann's light Mayo and skipped the jalapenos. Tasted really good. Thx - 8/14/09

I would have to use real crab, and no Jalapenos for my husband sake. Although I would make these changes it sounds like a great refreshing recipe. Thanks - 7/27/09
