Lentil and turkey sausage stew

Ingredients
1 lb turkey Italian sausage links (about 5)1 1/2 cup dry lentils5 cups chicken broth2 carrots, chopped and diced1 cup onion, chopped and diced2 cloves garlic, diced1 tsp cumin1 tsp red pepper flakes1 tsp black pepper1 bay leaf
Directions
Coat dutch over or large pot with cooking spray and place over medium heat. Add sausages to the pot and brown and cook through (about 10 minutes). Remove sausages to a plate and cut them into discs.


Add onions, garlic and carrots to the pot. Cook for a few minutes until the onions are transparent. Add the lentils, broth, cumin, black pepper, red pepper flakes, and bay leaf. Reduce heat to low, cover and simmer for 25 minutes.


Remove the bay leaf from the stew and add in the sausage. Stir and serve.
