Spicy Beef Slow-Cooker Curry

Ingredients
1 pound beef stew meatsalt and pepper to taste2 cloves garlic, minced1 teaspoon chopped fresh ginger1 fresh jalapeno peppers, diced1 tablespoon curry powder1 (14.5 ounce) can diced tomatoes with juice1 onion, sliced and quartered1 beef bouillon cube4 cups cooked rice
Directions
Add everything except rice to slow-cooker (dissolve bouillon cube in about 1/4 c boiling water). Remember to not include jalapeno pepper seeds, unless you like it REALLY hot. Cook for 6-8 hours. When ready, serve over rice. Makes 4 servings. (Each serving of curry is around 3/4 c of stew and liquid; rice, obviously, is 1 c per serving.)
