Roast vege mini quiche (no pastry)

Ingredients
Egg, fresh, 6 medium Milk, 1 cup Pumpkin 200 grams Kumara 200gCanola Oil, 1 tbsp Mushrooms, fresh, 0.5 cup, Choped finelyEdam Cheese, 50 grams, grated1 tomatoe
Directions
Preheat the oven to 180.

Chop the pumpkin and kumara into small cubes then roast till cooked.

While the veges are roasting, chop up the mushrooms. Then in a bowl, mix together eggs and milk. Can add salt pepper too, i sometimes like to put a bit of chilly sauce in the eg mixture for abit of taste. Then add the chopped mushrooms to the egg mixture.

In a muffin tray, evenly divide the pumpkin and kumara cubes into each serv. Then pour the egg mixture into each muffin part over the veges.

Cut the tomatoes into slices, then halv each slice, then place them on top of each mixture.

Put into oven for 10min, then put the cheese on top of each serv. Cook for another 10min or till kooked :)
