Blueberry White Chocolate Chip Oatmeal Cookies

Ingredients
- 1 cup quick-cook oats, toasted to light brown - 1/4 cup white all purpose flour- 1/4 cup wheat all purpose flour- 1 egg- 1/4 cup brown sugar- 1/4 cup Nestle white chocolate chips- 1/4 cup butter- 2 teaspoons vanilla extract- 1/2 teaspoon salt- 1/2 teaspoon baking soda- 1/2 cup frozen wild blueberries
Directions
Preheat oven to 350 degrees.
With oats on a cookie sheet, toast until lightly browned.
In a large mixing bowl, combine the oats, flour, salt and baking soda.
In a medium electric mixer bowl combine butter and brown suger until smooth. Add vanilla and egg. Mix until smooth. Add in the oats and flour mixture and blend until combined.
Add in the white chocolate chips mixing as you add. Then add in the blueberries and stir by hand.

Recipe yields 12-14 cookies. 1 cookie= 1 serving.
