Couscous Salad with Salmon

Ingredients
1 cup whole wheat couscous, uncooked6 asparagus spears3 red pepper rings4 medium scallions1 tomato1 4oz fillet of salmon5 fresh basil leaves
Directions
Prepare the couscous as instructed. Allow the couscous to cool. Grill the salmon or lightly pan fry. Allow the fish to cool. Chop everything up and mix together. Eat cold. This makes about 2.5 servings
