Slow Cooker Chicken Leg Quarters

Ingredients
4 medium red potatoes, quartered with skin left on2 chicken leg quarters as is1 3/4 c chicken broth(Note: this is a base recipe - you could add all kinds of spices to change the flavor of this dish.)
Directions
Cut your red potatoes into large quarters and place them in the bottom of the slow cooker. place the leg quarters skin side up on top of the potatoes. pour the broth over it all and try to make sure that you don't have so much broth that the chicken is submerged, just the potatoes. you want the broth to absorb into the potatoes as they cook to make THEM yummy, but we want the chicken to cook on its own on top with some seasonings of your choice on the skin side (I used Old Bay Seasoning), so it can hopefully golden up and not fall apart completely. should have a meal when you get home from work! only need to do a veggie for the side and dinner is done! cook on LOW for 8 hours and it should be all set. I expect this will make 4 hearty servings.

    This was a great way to keep the chicken together and keeping it from turning into soup. I actually had it on low for 10 hours and I was concerned that the chicken would dry out and the potatoes would turn to mush but everything came out perfect! - 8/10/09

    Yep - I was thrilled that this worked so well. the chicken stays incredibly tender - still fall off the bone tender, but it doesn't fall apart. I did find that it was less chicken per serving than I had expected, so I have added another leg quarter when I prepare it. glad you enjoyed it!

    My husband and I really enjoyed this. I didn't have any red potatoes to hand, so I substituted regular baking ones instead. I was also short on stock, so I added a few sprigs of fresh rosemary from a friend's garden to add some more flavour. I'm very pleased with the result! - 10/7/09
