Roasted Sweet Red Peppers to FREEZE

Ingredients
5 Large Fresh Sweet Red Peppers Leave whole1/3 cup Olive Oil4 cloves garlic minced1 tsp Dried Oregano
Directions
Wash and Fry Peppers. There are 2 easy ways to Roast them...1. place cooling rack on baking sheet and put under broiler. Broil approx. 3 min's per side till black. Rotate to blacken all sides... 2. Place on rack on grill and blacken on all sides. When all blackened, place in a brown paper grocery bag, roll down top and let steam themselves for approx 15 min's.
Take out of bag and as gently as possible keeping the peepers whole, peel off black skin. Lay on cutting board and cut one side to open and lay flat. (pepper is all in one piece)...Remove stem and seeds. Cut pepper into 4 pieces. Cut from top to bottom. You could be done at this point. Divide the peppers into 4 containers. Add garlic, oregano and oil to each container. Cover and freeze. OR Fry in 4 groups. In frying pan add 1/4 of the olive oil and 1 clove minced garlic. Place pepper in HOT frying pan and fry for approx 2-3 min's per side. Take out of pan and place on dinner plate to cool a bit. Sprinkle with oregano. Place PEPPER, OIL AND GARLIC in freezer container. Do the same with the next 3 batches.
Best to thaw on your counter to room temperature or in the Frig. Store in Refrig after thawing.
Roasted Sweet Red Peppers can be put on sandwiches, added to salads or pasta dishes. The sky is the limit.
