Aztec Salad

1 15 oz. can low sodium black beans2 cups frozen corn, thawed2 large tomatoes, diced1 green pepper, seeded and diced1 red or yellow pepper, seeded and diced1/2 jalapeno pepper, seeded1/2 cup chopped fresh cilantro1/2 cup diced red onionDressing:2 Tablespoons olive oiljuice of one lime2 Tablespoons vinegar2 minced garlic cloves1/2 teaspoon salt2 teaspoons ground cumin1 teaspoon ground coriander
Combine dressing ingredients in a small jar. Shake to blend. Shake to blend. Set aside.
Drain and rinse beans. Mix together tomatoes, corn, beans, peppers, onion, crushed red pepper, and cilantro in a large bowl. Toss with dressing, and chill until serving time. Makes about 8 one cup servings.
