Sweet Potato Oven fries w/Rosemary & Sea Salt

Two 5" long sweet potatoes, with skin2 Tablespoons fresh rosemary1 Tablespoon olive oil1/2 Teaspoon sea salt
Makes 3 good size servings. Preheat oven to 400 degrees.
Slice sweet potatoes into thin strips-about 1/2 inch wide and 1/2 inch thick. Pour olive oil onto a jelly roll pan/cookie sheet large enough to lay out fries in 1 layer. Add fries, shake to coat the fries in the olive oil. Sprinkle rosemary over top. Bake for 20 minutes, turn fries, bake additional 20 minutes til both sides are crispy brown. Sprinkle with sea salt and serve.
