Garlic Infused Cooking Oil

2 cups olive oil10 - 15 cloves minced garlicred pepper flakes (optional)
Every week I make an infused olive oil to cook with throughout the busy work week. It saves times and adds flavor to keep veggies from getting boring.
Gently warm olive oil with several cloves minced garlic and hot pepper flakes. Turn off the heat before the garlic begins to brown and let sit an hour or so at room temperature. Keep in the refrigerator and use mixed with a bit of water to sautee vegetables (asparagus, spinach, mixed greens, zucchini, etc), mix with raw tomatos to make a nice light pasta sauce, or spread on baguette and toast to make a nice garlic bread.
