Chicken & Mushroom Sauce

Ingredients
4 Chicken breast, boneless, skinless- sliced in half (1lb)2-1tbsp smart balance w/ olive oil(omega 3) butter3- cloves Garlic (chopped)1c.- Swanson's organic-free range chicken broth1/4c.- Balsamic Vinegar1c.- Sliced Mushrooms1/4tsp. Salt1/4tsp. Black Pepper
Directions
On Med-high heat. Warm 1 tbsp. butter until just melted. Add chopped garlic and saute for about 1 minute or until it starts to brown.
Add the Chicken and cook for about 3 minutes on each side. Then add the balsamic and chicken broth. Mix a tsp. of Cornstarch in 1/4 cup of water and stir until dissolved. Add to the pan and stir. and simmer on Med for about 4 minutes. Add Salt and Black Pepper to taste.

In a smaller pan, Melt remainder butter on med-hi. Add mushrooms and saute until a golden brown.
Add mushrooms to the chicken and cook for an additional 2 minutes. Serve with Spinach and Brown Rice(optional)

    Made a variation; subbed the butter with EVOO and started by sauteeing the mushrooms & a chopped onion, added half a chicken bouillon cube & some water and let it boil until the cube was dissolved. Added the balsamic & corn starch & then cooking cream & lemon juice, so good! - 2/27/18
