Spinach-Egg Cups

Ingredients
3/4 cup egg substitute1/4 cup red pepper (or fresh jalepeno)1/4 cup green onions10 oz pkg spinached thawed/wringed out dry3/4 cup Pepper Jack Cheese (or low fat sub)Aluminum baking cups
Directions
Thaw spinach by placing in microwave for about 2-2 1/2 minutes; wring water out of the spinach.

Combine all ingredients together in a bowl; mix well. Divide evenly into 12 aluminum baking cups sprayed with cooking spray.

Bake at 350 degrees for 20 minutes.
