cranberry cornmeal muffins

Ingredients
1 cup all purpose flour3/4 cup yellow cornmeal2 tsp baking powder1/4 cup splenda blend for baking3/4 cup low fat buttermilk1/4 cup fat free sour cream1/2 tsp orange zest1 egg white1 cup fresh or frozen cranberries, chopped
Directions
in a med bowl mix together the flour through splenda.
in a small bowl mix together the buttermilk through cranberries.
add the liquid to the dry and mix just until combined.
bake in 12 greased muffin tins at 350 for about 22 minutes.
makes 12 muffins

    I tried this recipe but added 1 tbls. butter, thought it might need some type of fat they tasted ok but I would like to work on the ingredients for a smoother consistency. - 5/3/11
