Snookum's Sweet Potatoes

29 oz. Sweet Potatoes, canned 6 Tbl. Margarine, softened1 C. Granulated Sugar1 Egg, beaten1 tsp. Vanilla Extract1 C. Non-fat evaporated MilkTopping:1 C. Brown Sugar, packed1 C. Corn Flakes, slightly crushed6 Tbl. Margarine, melted1 C. Pecans, chopped 1 C. coconut flakes unsweetened
Drain sweet potatoes, and mash well, in 9x13 dish or pan. Add margarine, sugar, beaten egg, and mix well. Add vanilla extract and evaporated milk and mix again. It will be fairly soupy. Bake at 350° for about 45 minutes or until firm, but not dry. Mix Topping ingredients in bowl and spread over potatoes. Return to oven and bake for another 15 or more minutes, until brown sugar has melted.
