Cherry Crisp for 2

5 oz Rainer (or sweet) cherries, pitted and halved1 tbsp sugar1/2 tbsp tapioca flour1/2 cup large flake oats1/2 tsp cinnamonPinch salt2 tbsp brown sugar3 tbsp water
Preheat the oven to 350 degrees. Spray ramekins with cooking spray.
In a small bowl, toss cherries with sugar and tapioca flour. Set aside.
Combine the oats, cinnamon, salt and brown sugar, mixing well.
Add the water to the oat mix, and combine with your hands until you have a crumbly mixture.
Divide cherries into the sprayed ramekins and add the oat topping. Spray tops with cooking spray.
Place ramekins on a baking sheet, bake for 20-30 minutes.
Let stand 10 minutes, then serve.
