BLT (Basil, Lemon & Tomato) Quick Barley Salad

Ingredients
2 Cups of Water1 Cup of Quick Cooking Barley1 - 15 oz. can of fire roasted tomatoes with garlic, drained but NOT rinsedthe zest of one lemon1 C of fresh basil chopped1 scallion, chopped
Directions
Cook barley according to package directions.

When finished combine with other ingredients. You could serve this immediately or I like to chill it in the fridge for about two hours to let all the flavors combine. This can be served cold or it is also great at room temperature.
