Stephanie Louise's Mashed Potatoes...With Cauliflower!

Baked Potato (no skin), 4.5 oz (Regular size, about 110 calories)Cauliflower, raw, 3 cup Garlic, 1 clove Parsley, 1 sprigs Soy Milk Plain Light, .25 cup Salt and Pepper to taste
Boil a large pot of water.
Peel and cube your potato and chop cauliflower while you wait.
When water boils, add potato cubes and cauliflower. Allow water to boil again, then reduce to medium heat. Cook for 15-20 minutes. They must be VERY tender, don't pull them out if you think they may not be ready!
Drain VERY carefully. Transfer into a large bowl and add in remaining ingredients. Now mash them to your hearts content :)
You can also add Chile powder, more garlic, cheese, or anything else. It'll still taste just like a heaping helping of mashed potatoes.
