3 # cooked & diced chicken breast3 Red delicious apples cored, chopped (do not peel)3 Yellow delicious apples cored, chopped (do not peel)3 stalks celery chopped1.5 cups grapes (halved)16 oz Low fat mayonaisse16 oz Low fat plain yogurt
Night before place a 3# bag of chicken breasts in crock pot with 1 cup water and sprinkle with Montreal Chicken seasoning. Cook overnight while you sleep. In morning, drain chicken and refrigerate for at least 1 hour. When cool, dice chicken.
In a large bowl, mix yogurt & mayonnaise till smooth. Add prepared chicken, fruit & celery. Transfer to serving bowl and refrigerate. Looks great in a glass bowl lined with Romaine lettuce leaves.
When guests arrive, set out with a bowl of cleaned lettuce leaves and small rolls. Recipe serves 12.
