Blueberry Salmon & Rice

Ingredients
1 Cup. Uncooked Uncle Bens Whole Grain Brown Rice0.5 Cup Yoplait Source Vanilla Yogurt1 Cup. Frozen Blueberries2 Salmon Fillets4 tbsp Balsamic Vinegar4 tbsp Honey2 tbsp Lemon Juice1 tbsp Extra Virgin Olive Oil
Directions
Start by cooking the fish how you normally would. I put my Fish in at 375F for 20 minutes with 0.5tbsp of EVOO on each fish.

Start the rice cooking. This is 20 minute rice so make sure you start it at the same time as the fish.

In a small saucepan combine the Balsamic Vinegar, Honey, Lemon Juice and Blueberries and bring to a boil. Reduce heat to very low and boil for 10 mintues.

When everything is cooked, spoon the blueberry mixture over the fish and rice. Mix yogurt into the rice as well, or leave off the the side for dipping.

Each serving contains 1 cup (cooked) rice, and a piece of fish. Remember this can be made with Chicken as well.

    Interesting recipe. My husband had similar at a restaurant so interested to see this. His was a rice pudding with salmon on top and sprinkled with blueberries. I added some adobo and paprika. My aged balsamic was pretty sweet and I think I would like it less sweet. Husband enjoyed it. - 12/2/16
