Quick and Easy Chicken Noodle Soup

1 tbsp. Olive Oil1/2 c. chopped onion1/2 c. chopped celery1 c. sliced carrots2 boxes chicken broth1 can vegetable broth12 oz. chicken breast, chopped1 1/2 c. egg noodles1/2 tsp. dried basil1/2 tsp. dried oregano1/2 tsp. poultry seasoningsalt and pepper to taste1 egg
Chop all the vegetables and chicken. Cook the noodles according to package directions (you don't have to do this, but I don't like the noodles to soak up all of the broth). Heat the oil in a soup pot and add the veggies. Cook until the celery and onion are just tender. Pour in the chicken and vegetable broths, chicken, noodles, basil, oregano, poultry seasoning, salt and pepper. Bring to a boil, then reduce heat and simmer 25 minutes. Crack the egg into a small bowl. Quickly whisk in about 1/2 c. of the soup to temper the egg. Stir the egg/broth mixture into the soup. Makes 6 main dish servings.
