Red Beans and Rice with Tofurky Kielbasa, Kay's

Ingredients
2 c. cooked brown basmati rice1 green bell pepper, chopped1 red bell pepper, chopped1 medium onion, chopped2 cloves garlic, minced1 pkg Tofurky Kielbasa (cut into coins)2 15 oz. cans kidney beans1 15 oz. can diced tomatoes1 T. thyme1 bay leaf1/4 t. cajun seasoningblack pepper to tastehot sauce to taste
Directions
Cook rice. In a large pot, saute peppers, onions and garlic in water. Add sausage and saute until brown. Add beans and one cup bean liquid, tomatoes with juice, thyme and bay leaf. Simmer, uncovered for 20 minutes, stirring occasionally. Season with pepper and hot sauce. Add rice to mixture and stir to combine. Remove bay leaf. Serves 6.
