Mini Fritatas

Ingredients
1/4 C. Skim milk5 Large Eggs1 C. chopped green peppers (bell peppers)1 C. Canned Mushrooms1/2 C. Shredded cheddar cheese1/2 C. Spinach chopped
Directions
Sautee green peppers until soft. Combine milk and eggs Add peppers, mushrooms, cheese, & spinach. Pour into a greased muffin pan. Makes about 9-10 depending on how much you put in each. Bake at 350 degrees for approx 30 minutes or until set and golden brown.
