Shrimp Casserole

Ingredients
32 oz shrimp1/2 c. onion, chopped1 c. celery, chopped2 c. fresh mushrooms, sliced1T. Olive Oil16 oz. Velvetta Cheese3 c. cooked white rice
Directions
Saute onions, celery and mushrooms in olive oil. Mix in shrimp, cheese and rice. Stir until cheese is melted and mixed. Pour into casserole dish and bake at 350 degrees for 30 minutes or until bubbly. Makes 8 1-cup servings.
