Vegan tofu lasagna

Ingredients
1 container firm or extra firm tofu1 tbsp lemon juice2 tsp dried basil1/2 tsp salt optional1/2 tsp garlic powder1/2 tsp onion powder2 tbsp nutritional yeast (optional)1-16oz can artichoke heart well drained and chopped up1/3 cup sliced olives1 box oven ready lasagna noodles3 1/2 cups tomato or marinara sauce
Directions
makes 6 servings in a glass 13x9 dish

Preheat oven to 350 degrees

mash together tofu, lemon juice, basil, salt, garlic, onion powder, and nutritional yeast.

Cover the bottom of the pan with a thick layer of the sauce, then place a layer of oven ready noodles (2 and 1 broke in half makes one layer). spread some tofu mixture and some cut up artichokes and some olives, and then another layer of noodles repeat until mixture is gone.

Place in oven bake 1 hour.
