Breakfast Zucchini Fritters

Ingredients
1 1/2 cup shredded Zucchini1/2 cup shredded Carrot1/2 Apple shredded2 Egg white2 Tablespoon Ground flax seed3 teaspoon Splenda1/4 teaspoon Cinnamon1/4 teaspoon Nutmeg
Directions
Shred zucchini, carrot, apple and toss together in bowl.
Add remaining ingredients and mix well.
Spray a 12 inch skillet with pam (or similar) and preheat.
When hot add zucchini mixture in 1/4 to 1/3 cup amounts and flatten with back of fork. (I got 4, 4 inch patties)
Make sure heat is on medium low and let cook about 5 minutes, flip and cook other side about 5 minutes.
Remove to plate and enjoy.
Makes one serving.
