Double Chip Coconut Drops

1 1/4 cups sugar1 cup brown sugar1 cup butter1 cup shortening400g silken tofu 2 tbsp honey1 tbsp vanilla1 tsp coconut extract3 cups flour2 cups whole-wheat flour1/2 cup cocoa powder, sifted1/2 cup finely shredded unsweetened coconut2 tsp baking soda2 tsp salt1/2 cup miniature chocolate chips1/2 cup miniature white chocolate chips
In a large bowl, cream the sugars, shortening and butter until fluffy.
In a food processor, puree tofu, honey, vanilla and coconut extract until smooth.
Add pureed tofu to the creamed mixture and beat well.
In separate bowl, whisk flours, cocoa powder, coconut, baking soda and salt.
Add flour mixture to creamed mixture and mix by hand until flour just disappears.
Fold in both types of chips.
Wrap dough in plastic and chill a minimum of 24 hours.
Preheat oven to 350.
Make cookie dough balls and place onto an ungreased cookie sheet.
Bake for 12 minutes. Cool 3 minutes on sheets then remove to a rack and cool completely.
