Cod Fish "Cakes"

16 oz (or 1 lb) of Cod Fish, already soaked in a couple changes of water1/2 C Whole Wheat Flour2 Medium Onions - Chopped5 Sprigs of Parsley - Chopped5 Whole EggsVegetable Oil for frying
1. Squeeze all water from the cod fish and break apart into small pieces and place in a medium sized bowl. Be sure all bones are removed.
2. Add chopped onion, chopped parsley and flour to the cod fish and mix well until the cod fish is coated.
3. Add one egg at a time and mix well.
4. In a small frying pan (8in pan is fine), pour the vegetable oil into the pan until just below the handle and heat.
5. Once the oil is heated, place the cod fish mixture one tablespoon at a time into the oil. I usually do 4 drops at a time.
6. Cook 5 minutes on each side.
7. When browned, removed from pan and place on a plate covered by a papertowel to soak up some of the oil.
Should make about 24 "cakes".
I serve with a nice green salad and vegetable rice.
