Half a bag Ronzoni healthy harvest wheat egg noodlesOne large Tomato, medium diced3 cloves garlic, diced finely2 oz. toasted pine nuts2 oz. feta cheese-fat free3-4 oz. spinach-fresh2 oz. olive oil or extra virgin oliveoil
Place 2T Olive oil in pan over medium heat. Dice tomato and finely chop garlic. place in pan. Wash spinach and quick chop, add to pan. simmer over medium heat 7-10 minutes. Brown pine nuts and add to the mix. Boil noodles until desired tenderness. Toss all ingredients together. Add feta cheese last. Add some boneless skinless chicken breasts to make this a FULL meal. Enjoy.
