Really Easy Crust Free Quiche

3 eggsone small tub of fat free cottage cheese5 medium mushrooms, choppedhalf medium onion, chopped50g sweetcorn50g red pepper, chopped50g yellow pepper, choppeddash soy sauce
Depending on the size portion you want can make 2 or 4 servings, I split it into two and have a whole half for my lunch!! Nutritional info based on two servings.
I cook off the veggies with some spray oil and soy sauce first to stop the quiche being 'runny' from the veggie juices.
Mix the tub of cottage cheese with the three eggs, stir in your veggies, pour into flan dish and cook in overn at 190 degrees C until golden on top (about 20 mins).
