Salsafied Chicken

Ingredients
1 lb skinless, boneless chicken breast - cubed1 tbsp olive oil1/4 tsp salt1/4 tsp pepper1 can chicken broth1 cup of Salsa2 cups brown rice4 oz shredded low fat mozzarella
Directions
In a large skillet over medium high heat, brown cubed chicken in oil with salt and pepper until juices run clear. Add broth and salsa and bring to a boil.

Once boiling, turn off heat and stir in rice. Sprinkle cheese on top. Cover and let stand for 5 minutes before serving.

Optional - add a dollop of sour cream on top of each serving (not included in calorie count).

Serves 6.
