Country Style Potatoes with Bacon Bits

Ingredients

5 gold potatoes ( or similar )1 cup diced tomatoes4 Tbsp corn oil ( you can use olive oil instead )10 Tbps bacon bits or pieces1/2 Medium size onion1 cup Tomato Sauce
Skin and cut potatoes in aprox 1 inch size pieces (cubed )
Chop onion.
Preheat oven at 420F.
Use 2 Tbps of oil to cover the surface of a baking tray.
Put all remaning ingredients in tray in a relatively thin layer ( 1 inch ) and spread the remaning oil evenly.
Cover tray with aluminum foil and bake for 20-25 minutes, until potatoes are done.
Then remove foil and leave 5 more minutes and until potatoes start browning a little.
Let it beathe and serve warm. You can use parsley and or dill if you like.
