Fish Mappas

Ingredients
1 TBSP olive or canola oil1 Medium onion, chopped1 tsp minced garlic1 tsp minced ginger root1 medium tomato, cut into wedges1 lb of tilapia fillets (or catfish), cut into 3-inch pieces1/2 Cup of water1/4 tsp of turmeric1 tsp salt1/4 tsp cumin seeds1/2 cup of 2% milk or lite coconut milk1/4 tsp of vinegar or tamarind paste.
Directions
1. Heat oil in a large, deep frying pan or pot, on medium-low heat. Add onion, garlic, ginger, and jalapeno (cut the ends off of the jalapeno, and toss it in, whole). Cook until onion becomes translucent

2. Add tomato and cook until it begins to soften

3. Add fish. Cook for 4 minutes.

4. Add water, salt, turmeric, cumin, and gently stir.

5. Bring to a boil. Reduce heat to medium, cover, and cook for 10 min, until fish becomes flaky.

6. Add coconut milk and cook for 2 more minutes

7. Remove from heat; sprinkle in tamarind or vinegar. Stir gently
