Squash Casserole

Ingredients
INGREDIENTS:2 1/2 lbs of yellow squash1 egg1/2 cup breadcrumbs + 1 Tbls. reserved for topping2 Tbls butter, melted1 tsp. salt1 Tbls finely chopped onionsdash pepper
Directions
DIRECTIONS: Preheat oven to 350.

Cut the tops off the squash and cut in 3-4 pieces. Boil in water until tender. Drain well and mash.

Add remaining ingredients. Place in 8 x 8 casserole dish.
Sprinkle lighlty with breadcrumbs.

Bake at 350 til lightly browned, approx 15 minutes.

Makes 5 1-cup servings.
