CHocolate Orange PUdding

1 envelope unflavored gelatin1 cup unsweetened Almond Breeze 1/3 cup Splenda3/4 cup nonfat ricotta cheese1/4 cup cocoa powder1 1/2 tsp orange extract1 tsp vanilla extract
Sprinkle gelatin over almond milk in small saucepan. Let stand 1 minute. Stir in Splenda; cook over medium heat, stirring constantly for about 2 minutes, until gelatin dissolved. Do not boil.
In blender, combine ricotta cheese, cocoa powder, and extracts. Process on medium speed, about 1 minute until pureed.
Reduce speed to low and gradually add gelating mixture; process until combined. Pour into individual servings cups. Refrigerate until set, at least 2 hours. Makes 4 servings
