Provencal Chick Peas & Tomatos

Ingredients
1 Tbsp Canola Oil10 tsps minced garlic1 can chick peas1 can diced tomatoes2 tbsps Herbes de Provence
Directions
Heat canola oil in a pan
Briefly sautee garlic
Drain, rinse & add chick peas
Mash a little of the chick peas to thicken
Add tomatoes and herbes de provence
Stir & simmer to taste

Note: you can add salt & pepper to taste (or experiment with other spices)

Yields 2 cups

    It's a spice blend. I found it in the spice aisle at the grocery store. It's a mix of oregano, marjoram, thyme, rosemary, aniseed & lavender. I don't know the ratios, but I've always found it prepackaged. Hope you enjoy the recipe!

    Very tasty, I think I added too much garlic. But I love it so it was still great. Nice and hearty, good source of protein and fiber. I have to belive the nutrition info is inflated. - 1/8/10
