2 tablespoons canola oil2 cups onion, chopped4 cloves garlic, minced2 tablespoons curry powder1 small can tomato paste, about 1/2 cup1 cup water2 cups chick peas, dried (cooked)1/2 tablespoon lemon juice1 teaspoon saltblack pepper to taste2 DASHES cayenne pepper, or to taste3 tablespoon margarine1 can crushed tomatoes, undrained
Makes about 15- 1/2 cup servings.
Cook chick peas according to package directions for quick cook method.
In a large saucepan heat oil on med heat and saute onions until slightly browned. Add garlic, curry and tomato paste. Stir and simmer fro about 2 minutes. Add drained chick peas, water, lemon juice, salt, and black pepper. Simmer for about 5 minutes, stirring occasionally. Add cayenne pepper and margarine. Stir and simmer for 5 more minutes. Serve over rice.
