Baked Blueberry Oatmeal

Ingredients
2eggs 1c Splenda1/2 c unsweetened applesauce3c oatmeal 1c skim milk 2 tsp baking powder pinch of salt 1 tsp cinnamon1c blueberries
Directions
Preheat oven to 350 degree. Combine eggs, splenda, and applesauce in 2 quart baking dish. Add oatmeal, milk, baking powder , salt and cinnamon; stir till well blended. Fold in the blueberries. Bake for 30 min. Cut into 8 servings. Serve plain or pour milk over it.

    This is SO yummy! First tried Baked Oatmeal while back East this summer - a total NON-Sparks version... this is Sparkified and is still so yummy... glad the whole family likes it or I would have too many left overs to try to stay out of! Quick and Easy... and yummy hot or cold! - 8/8/09

    I did some changes to this recipe. I personally added flax seeds used mixed frozen berries instead of just blueberries and a scoop of vanilla protein powder. Because of the powder I had to add about another half cup of soy milk. It turned out DELISIOUS!!! Even cold like a quick energy bar! - 10/11/12

    I made this for my daughter and I (halved the recipe). We both thought it was yummy. I warmed the leftovers up and they were great too. I will say I added a tsp of olive oil and used the splenda baking blend. So my calorie count & fat content a bit higher. - 8/17/09
